Paula Lyons has worked in kitchens and pastry shops across Europe including Italy, Germany and Holland as well as in Australia and Hong Kong. She honed her pastry skills upon arrival in Canada at the prestigious Pacific Institute of Culinary Arts in Vancouver.

Having worked at The Westin Bayshore and The Hyatt, Paula has had the opportunity to present desserts and corporate cakes to Prime Minister Jean Chrétien, President Bill Clinton, Mayor Rudy Giuliani, and the Japanese princess to name but a few.

"But I never had a chance to ask them how they really liked their last course," she says. Making personalized cakes allows her closer contact with her clients, and she says there is nothing like playing a part in a great event in someone's life.

There is no compromising on the quality of ingredients; she believes the taste is equally as important as a beautiful exterior.

"Fortunately for all of us the days when a wedge of wedding cake doubled as a door stop are gone forever," she says. The cake these days can be just as show-stopping as the bride's mother's hat!
